recipe: high-fiber carrot cake muffins
they're also gluten free but that would've made the title too long
as a society, we’re so focused on “getting enough protein” that we completely neglect the very real need for other dietary requirements. in fact, Mayo Clinic suggests that most people in the U.S. are exceeding the protein recommendations.
yet only 5% of the population is consuming enough fiber regularly, with fiber deficiencies increasing risk of gastrointestinal issues, heart disease, type 2 diabetes, and more. With heart disease being the leading cause of death in the U.S. for over 60 years, and the steep increase in colon cancer cases in young people, it’s never been more important to increase your fiber intake!
personally, I love a muffin as a little treat during the day or for breakfast, and within reason, you can put so many good things into them. I’ve found a way to not only include one source of fiber, but five sources into one perfectly sized little snack.
and now I’m sharing with you!
Ingredients:
1/2 cup shredded carrots
1 large banana
4 oz container of apple sauce
2 eggs
5.3 oz container of plain greek yogurt
1/2 cup brown sugar
1 + 1/4 cup 1:1 gluten free flour (or regular flour for non-gf)
1/2 cup oat flour (ground up gluten free oats)
1/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp ginger
raisins, dates, or pecans, etc. (optional)
Instructions:
preheat oven to 350° F
in a large mixing bowl, mash a slightly brown large banana
add in shredded carrots, apple sauce, and greek yogurt - mix together
add in 2 eggs and brown sugar, mix
in a separate bowl, mix together gluten free flour, oat flour, salt, baking soda, baking powder, cinnamon and ginger
add dry ingredients to the carrot mixture and mix together
fold in any optional ingredients like raisins or nuts (or chopped dates for even more fiber!)
line a standard 12-muffin pan with baking cups
fill cups almost to the top
bake at 350° F for 20 minutes, or until toothpick comes out clean
